Famous Maharashtrian Street Food Misal Pav at Home

People in Maharashtra especially in cities like Pune, Nashik, Mumbai, and Kolhapur—are very fond of Misal Pav. It is frequently enjoyed as a breakfast dish or a snack, and it is quite filling. Interestingly, while the basic concept of Misal Pav remains the same everywhere, its flavor profile and level of spiciness can vary significantly from one city to another.

Kolhapuri Misal, for instance, is famous for being exceptionally spicy, whereas versions found elsewhere may be milder and feature a different blend of spices.

What is Misal Pav?

Misal is a popular dish prepared using sprouted moth beans or other types of pulses and legumes. These are cooked in a flavorful, spicy gravy known as rasa. To add a satisfying crunch, the dish is topped with farsan, along with chopped onions, fresh coriander, and a dash of lemon juice. This combination gives Misal a truly unique taste and texture. The heat from the rasa and the crunch of the farsan come together to create a delicious and hearty meal.Misal is served with pav, which help balance out its spicy flavors.

The blend of tender sprouted beans, a piquant gravy, and crunchy farsan makes this a distinctive and highly cherished dish from Maharashtra.

Ingredients:

- 1 cup sprouted moth beans (matki), or a mix of various sprouted legumes

- 1 onion, finely chopped

- 1 tomato, chopped

- 1 tablespoon ginger-garlic paste

- 2 tablespoons oil

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder (adjust to taste)

- 1 teaspoon coriander powder

- 1–2 teaspoons Maharashtrian Goda Masala or Misal Masala

- Salt to taste

- 3–4 cups water (as needed)

For Serving:-

- 4 pav (bread rolls)

- 1 cup farsan or chivda mixture

- 1 onion, finely chopped

- Fresh coriander leaves

- Lemon wedges

How to Make Misal Pav

Step 1: Cook the Sprouted Legumes

First, rinse the sprouted legumes and cook them until they are soft. Using a pressure cooker will save time. Once cooked, set the legumes and the cooking liquid aside for now.

Step 2: Prepare the Masala Base

To prepare the dish, heat some oil in a pan. Add the chopped onion and sauté until it turns light golden brown. Next, add the ginger-garlic paste and cook for a short while. Then, add the tomato, turmeric powder, red chili powder, coriander powder, and Misal Masala.Cook everything until the tomatoes soften and the spices release a fragrant aroma.

Step 3: Prepare the Curry

To create a flavorful rassa, add the cooked sprouted legumes, some salt, and a little water. Let it cook over low heat for about 10–15 minutes so that all the flavors meld together well. Check the consistency if you prefer it thicker, let it cook for a few more minutes. Traditionally, the rasa is slightly thinner than a standard dry bean curry, so keep that in mind. Adjust it to your preference, and there you have it.

Step 4: Assemble the Misal

To serve, pour the piping hot Misal into a bowl and top it with some crunchy farsan. Sprinkle with chopped onions and fresh coriander leaves. Just before eating, squeeze a little lemon juice over the top—this really enhances the flavors.

Step 5: Serve with Pav

You can serve it immediately alongside pav. If you like a bit of crunch, you can lightly toast the pav the choice is entirely yours!
