Daulat Ki Chaat Recipe: Make Delhi’s Famous Winter Dessert at Home

Delhi is famous for chole bhature, parathas and spicy street food. But when winter arrives, Old Delhi has another speciality that surprises first-time visitors: Daulat Ki Chaat.

This dessert is a real treat. It's not spicy like you'd think, but sweet and delicate. Made from whipped milk and cream, it's so light it just melts in your mouth. You can usually find it in Old Delhi on cold winter mornings. They top it with fancy stuff like saffron, sugar, and nuts. The real deal takes time and skill to make, but you can try a simpler version at home if you want. It's called Daulat Ki Chaat, and it's a classic.

What Is Daulat Ki Chaat?

Daulat Ki Chaat is a traditional Old Delhi dessert prepared by collecting delicate layers of milk foam and topping them with sweet ingredients.

You can find this sweet treat being sold a lot during the winter months, especially in the streets of Chandni Chowk. It's also known by different names in other cities in North India. For example, in Lucknow, people call it Nimish, while in Kanpur it's known as Makhan Malai, and in Varanasi, it's called Malaiyo.

The story of this dessert is tied to royal kitchens and old trade routes, but nobody really knows where it came from. People have tried to figure it out, but so far, they haven't found any solid answers. It's a mystery that still needs to be solved.

Ingredients for Homemade Daulat Ki Chaat

This simplified recipe makes approximately 3–4 small servings.

- 500 ml full-fat milk

- 200 ml chilled whipping cream

- 2–3 tablespoons powdered sugar, according to taste

- A few strands of saffron

- 1- To soak saffron, you'll need 1 tablespoon of warm milk.

- 2 tablespoons finely chopped pistachios or almonds

- 2 tablespoons grated khoya, optional

- A little cardamom powder, optional

When you're getting ready to whip the milk and cream, make sure to keep them in the fridge until then. Don't leave them outside overnight, even if you want to do it the old-fashioned way.

How to Make Daulat Ki Chaat at Home

Step 1: Chill the Ingredients

To make a light and airy foam, you need to start with really cold milk and cream. Put them in a big, clean bowl and stick it in the fridge until they're chilled to the bone. It's also a good idea to use a cold bowl, as this will help keep the mixture cool while you're whipping it. The key is to keep everything cold, because if it's too warm, you'll end up with a thick and buttery mess instead of a light and fluffy foam.

Step 2: Whip the Milk and Cream

To get started, take an electric hand mixer and use it to whisk the mixture that's been chilled. Start at a medium speed and keep going until you see a layer of foam forming on the surface - it should be really delicate. Next, grab a big spoon and gently scoop up the foam, then transfer it to another bowl that's been chilled. Just keep whipping and collecting the foam as it forms, and repeat the process.

When you're making this, remember that it might not be exactly like the kind you buy on the street. So, be gentle when you're mixing it and don't overdo it with the cream - stop before it gets too stiff.

Step 3: Prepare the Saffron Milk

To give your dessert a nice golden color and a hint of saffron, start by soaking a few strands of saffron in a tablespoon of warm milk. Let it cool down completely - this is important - before you use it. The result is a light golden color and a delicate aroma that's just perfect for your dessert.

Step 4: Assemble the Dessert

To serve, put the milk foam you collected into small bowls. Add a bit of powdered sugar on top, then a few drops of saffron milk that's been cooled down. If you like, finish it off with some chopped nuts like pistachios and almonds, and a bit of grated khoya.

Step 5: Serve Immediately

You should eat Daulat Ki Chaat right after it's made, because if you wait too long, it starts to fall apart. So, keep it in the fridge until you're ready to serve it, and don't leave it out at room temperature for too long.

Tips for Getting the Best Results

Using full-fat dairy is a good idea because it makes things taste better and feel richer.

Keep everything cold: Warm ingredients make it harder to produce and preserve delicate foam.

Don't overdo it - you want your cream to be light and fluffy, not stiff like whipped cream.

Be careful when you add sugar, because too much of it can overwhelm the delicate taste of the milk.

You might not get the exact same thing at home - traditional vendors have their own ways of doing things that give their products a unique texture, and it's hard to replicate that without their special techniques and experience.

Why Is Daulat Ki Chaat a Winter Speciality?

People have been making this dessert for a long time, and it's usually made at night when it's cool. The people who make it, whip the milk and collect the foam, then sell it in the morning. If it's cold outside, the foam stays good for a longer time. But when it gets hot, it's harder to keep the foam from falling apart, which is why you usually eat this dessert in the winter. Making it is also a lot of work. The people who are good at making it can spend hours getting the foam just right and putting it into big trays. Some people have written about the history of this dessert, like *The Indian Express*, but nobody really knows who came up with it first. There are some ideas about where it came from, but they're just guesses, not facts.

Where Can You Try Daulat Ki Chaat in Delhi?

If you want to experience the traditional version, explore the food lanes around Chandni Chowk, Dariba Kalan and Sitaram Bazaar in Old Delhi during the winter season.

You should check with the vendor first because they might not have it all the time, and the weather can also affect availability. It's a good idea to go in the morning, that's when they usually sell this dessert.

Save this recipe for the cold winter months and pass it on to a friend who's crazy about trying out traditional Delhi dishes.

Food safety note: This home recipe uses refrigerated dairy and is a simplified adaptation, not an exact reproduction of the traditional vendor method.*
